Israel, officially the State of Israel, is a country in the Southern Levant, West Asia. It is bordered by Lebanon and Syria to the north, the West Bank and Jordan to the east, Egypt, the Gaza Strip and the Red Sea to the south, and the Mediterranean Sea to the west. Tel Aviv is the country's financial, economic, and technological center. Israel's governmental seat is in its proclaimed capital of Jerusalem, though Israeli sovereignty over East Jerusalem is not recognised under international law and only has limited recognition internationally.

Israel is located in a region known historically as Canaan, Palestine, and the Holy Land. In antiquity, it was home to Canaanite city-states, then the kingdoms of Israel and Judah, and is referred to as the Land of Israel in Jewish tradition. Situated at a continental crossroad, the region was then ruled by various empires. Amid European antisemitism, the late 19th century saw the rise of Zionism, which sought a Jewish homeland. British occupation led to the establishment of Mandatory Palestine in 1920. Jewish immigration, combined with British colonial policy, led to intercommunal conflict between Jews and Arabs. Aliyah (US: /ˌæliˈɑː/, UK: /ˌɑː-/; Hebrew: עֲלִיָּה ʿălīyyā, lit.'ascent') is the immigration of Jews from the diaspora to, historically, the geographical Land of Israel or the Palestine region, which is today chiefly represented by the State of Israel. Traditionally described as "the act of going up" (towards the Jewish holy city of Jerusalem), moving to the Land of Israel or "making aliyah" is one of the most basic tenets of Zionism. The opposite action — emigration by Jews from the Land of Israel — is referred to in the Hebrew language as yerida (lit.'descent'). The Law of Return that was passed by the Israeli parliament in 1950 gives all diaspora Jews, as well as their children and grandchildren, the right to relocate to Israel and acquire Israeli citizenship on the basis of connecting to their Jewish identity.

For much of their history, most Jews have lived in the diaspora outside of the Land of Israel due to various historical conflicts that led to their persecution alongside multiple instances of expulsions and exoduses. In the late 19th century, 99.7% of the world's Jews lived outside the region, with Jews representing 2–5% of the population of the Palestine region. Despite its historical value as a national aspiration for the Jewish people, aliyah was acted upon by few prior to the rise of a national awakening among Jews worldwide and the subsequent development of the Zionist movement in the late 19th century; the large-scale immigration of Jews to Palestine had consequently begun by 1882. Israeli cuisine primarily comprises dishes brought from the Jewish diaspora, and has more recently been defined by the development of a notable fusion cuisine characterized by the mixing of Jewish cuisine and Arab cuisine. It also blends together the culinary traditions of the various diaspora groups, namely those of Middle Eastern Jews with roots in Southwest Asia and North Africa, Sephardi Jews from Iberia, and Ashkenazi Jews from Central and Eastern Europe.

The country's cuisine also incorporates food and drinks traditionally included in other Middle Eastern cuisines (e.g., Iranian cuisine from Persian Jews and Turkish cuisine from Turkish Jews) as well as in Mediterranean cuisines, such that spices like za'atar and foods such as falafel, hummus, msabbaha, shakshouka, and couscous are now widely popular in Israel. Challah (/ˈxɑːlə/, Hebrew: חַלָּה ḥallā [χa'la] or Hallah [ħɑl'la]; plural: challot, challoth or challos, also berches in Central Europe) is a special bread of Ashkenazi Jewish origin, usually braided and typically eaten on ceremonial occasions such as Shabbat and major Jewish holidays (other than Passover). Ritually acceptable challah is made of dough from which a small portion has been set aside as an offering. Challah may also refer to the dough offering. The word is biblical in origin, meaning "loaf". Similar braided breads such as kalach and vánočka are found across Central and Eastern Europe. (Full article...)
