Introduction
Food is any substance consumed by an organism for nutritional support. Food is usually of plant, animal, or fungal origin and contains essential nutrients such as carbohydrates, fats, proteins, vitamins, or minerals. The substance is ingested by an organism and assimilated by the organism's cells to provide energy, maintain life, or stimulate growth. Different species of animals have different feeding behaviours that satisfy the needs of their metabolisms and have evolved to fill a specific ecological niche within specific geographical contexts.
Omnivorous humans are highly adaptable and have adapted to obtain food in many different ecosystems. Humans generally use cooking to prepare food for consumption. The majority of the food energy required is supplied by the industrial food industry, which produces food through intensive agriculture and distributes it through complex food processing and food distribution systems. This system of conventional agriculture relies heavily on fossil fuels, which means that the food and agricultural systems are one of the major contributors to climate change, accounting for as much as 37% of total greenhouse gas emissions. Cooking, also known as cookery or professionally as the culinary arts, is the art, science and craft of using heat to make food more palatable, digestible, nutritious, or safe. Cooking techniques and ingredients vary widely, from grilling food over an open fire, to using electric stoves, to baking in various types of ovens, reflecting local conditions. Cooking is an aspect of all human societies and a cultural universal.
Preparing food with heat or fire is an activity unique to humans. Archeological evidence of cooking fires from at least 300,000 years ago exists, but some estimate that humans started cooking up to 2 million years ago.
The expansion of agriculture, commerce, trade, and transportation between civilizations in different regions offered cooks many new ingredients. New inventions and technologies, such as the invention of pottery for holding and boiling of water, expanded cooking techniques. Some modern cooks apply advanced scientific techniques to food preparation to further enhance the flavor of the dish served. (Full article...)
KFC (also commonly referred to by its historical name Kentucky Fried Chicken) was founded by Colonel Harland Sanders, an entrepreneur who began selling fried chicken from his roadside restaurant in Corbin, Kentucky, during the Great Depression. Sanders identified the potential of restaurant franchising, and the first "Kentucky Fried Chicken" franchise opened in Salt Lake City, Utah, in 1952. KFC popularized chicken in the fast-food industry, diversifying the market by challenging the established dominance of the hamburger. Branding himself "Colonel Sanders", the founder became a prominent figure of American cultural history, and his image remains widely used in KFC advertising. The company's rapid expansion made it too large for Sanders to manage, so in 1964 he sold the company to a group of investors led by John Y. Brown Jr. and Jack C. Massey.
KFC was one of the first fast-food chains to expand internationally, opening outlets in Britain, Mexico, and Jamaica by the mid-1960s. Throughout the 1970s and 80s, KFC experienced mixed success domestically, as it went through a series of changes in corporate ownership with little or no experience in the restaurant business. In the early 1970s, KFC was sold to the spirits distributor Heublein, which was taken over by the R. J. Reynolds food and tobacco conglomerate, which later sold the chain to PepsiCo. Traditional fixed markets in Mexico are multiple-vendor markets permanently housed in a fixed location. They go by a variety of names such as "mercados públicos" (public markets), "mercados municipales" (municipal markets) or even more often simply "mercados" (markets). These markets are distinct from others in that they are almost always housed in buildings owned and operated by the local government, with numerous stands inside rented by individual merchants, who usually sell, produce and other basic food staples. This market developed in Mexico as a way to regulate pre Hispanic markets called tianguis. These tianguis markets remain in Mexico, with the most traditional held on certain days, put up and taken down the same day, much the way it was done in Mesoamerica.
These fixed mercados can be found in any town of any size in Mexico. Often, they are accompanied one or more days per week by tianguis, which set up around the main building. However, the largest, best developed and most numerous fixed markets are in Mexico City, which has over 300, 80 of which are specialty markets dedicated to one or more classes of merchandise, such as gourmet food, plants, cut flowers, candy etc. (Full article...)Selected cuisine -
The oldest known book on Portuguese cuisine (Portuguese: Cozinha portuguesa), entitled Livro de Cozinha da Infanta D. Maria de Portugal, from the 16th century, describes many popular dishes of meat, fish, poultry and others.

Chili peppers, also spelled chile or chilli (from Classical Nahuatl chīlli [ˈt͡ʃiːlːi] ), are varieties of the berry-fruit of plants from the genus Capsicum, which are members of the nightshade family Solanaceae, cultivated for their pungency. Chili peppers are widely used in many cuisines as a spice to add "heat" to dishes. Capsaicin and related compounds known as capsaicinoids are the substances that give chili peppers their intensity when ingested or applied topically. Chili peppers exhibit a range of heat and flavors. This diversity is the reason behind the availability of different types of paprika and chili powder, each offering its own taste and heat level.
Chili peppers are believed to have originated in Central or South America and were first cultivated in Mexico. European explorers brought chili peppers back to the Old World in the late 16th century as part of the Columbian Exchange, which led to many cultivars spreading around the world and finding use in both food and traditional medicine. This led to a variety of cultivars, including the annuum species, with its glabriusculum variety and New Mexico cultivar group, and the species of baccatum, chinense, frutescens, and pubescens. In Vietnamese cuisine, bánh mì or banh mi (/ˈbɑːn miː/, /ˈbæn/; Vietnamese: [ɓǎjŋ̟ mì], 'bread') is a short baguette with thin, crisp crust and a soft, airy texture. It is often split lengthwise and filled with meat and savory ingredients like a submarine sandwich and served as a meal, called bánh mì thịt. Plain bánh mì is also eaten as a staple food.
A typical Vietnamese roll or sandwich is a fusion of meats and vegetables from native Vietnamese cuisine such as chả lụa (Vietnamese sausage), coriander (cilantro), cucumber, pickled carrots, and pickled daikon combined with condiments from French cuisine such as pâté, along with red chili and mayonnaise. However, a variety of popular fillings are used, from xá xíu (Chinese barbecued pork) to even ice cream. In Vietnam, bread rolls and sandwiches are typically eaten for breakfast or as a snack. Thomcord is a seedless table grape variety and a hybrid of the popular Thompson Seedless or Sultanina grape (a Vitis vinifera variety) and Concord grape (a Vitis labrusca variety). Thomcord was developed in 1983 by Californian grape breeders working for the Agricultural Research Service (ARS), an agency of the United States Department of Agriculture (USDA), as part of a test to better understand a new seedless grape breeding procedure.
Its aromatic, "labrusca" flavor is similar to that of Concord, but mellowed by the mild, sweet taste from Thompson Seedless. Thomcord grows well in hot, dry climates, ripens between late July and mid-August, and tolerates powdery mildew. It is a productive variety, yielding an average of 15.1 kg (33 lb) of grapes per vine, but has produced as much as 30 to 32 kg (66 to 71 lb) per vine in grower trials. The berries weigh between 2.72 and 3.38 g (0.096 and 0.119 oz) and have a medium-thick, blue-black skin that adheres to the fruit, unlike Concord, which has a thick skin that can slip off the pulp easily.
