Food is any substance consumed by an organism for nutritional support. Food is usually of plant, animal, or fungal origin and contains essential nutrients such as carbohydrates, fats, proteins, vitamins, or minerals. The substance is ingested by an organism and assimilated by the organism's cells to provide energy, maintain life, or stimulate growth. Different species of animals have different feeding behaviours that satisfy the needs of their metabolisms and have evolved to fill a specific ecological niche within specific geographical contexts.
Omnivorous humans are highly adaptable and have adapted to obtain food in many different ecosystems. Humans generally use cooking to prepare food for consumption. The majority of the food energy required is supplied by the industrial food industry, which produces food through intensive agriculture and distributes it through complex food processing and food distribution systems. This system of conventional agriculture relies heavily on fossil fuels, which means that the food and agricultural systems are one of the major contributors to climate change, accounting for as much as 37% of total greenhouse gas emissions. Cooking, also known as cookery or professionally as the culinary arts, is the art, science and craft of using heat to make food more palatable, digestible, nutritious, or safe. Cooking techniques and ingredients vary widely, from grilling food over an open fire, to using electric stoves, to baking in various types of ovens, reflecting local conditions. Cooking is an aspect of all human societies and a cultural universal.
Preparing food with heat or fire is an activity unique to humans. Archeological evidence of cooking fires from at least 300,000 years ago exists, but some estimate that humans started cooking up to 2 million years ago.
The expansion of agriculture, commerce, trade, and transportation between civilizations in different regions offered cooks many new ingredients. New inventions and technologies, such as the invention of pottery for holding and boiling of water, expanded cooking techniques. Some modern cooks apply advanced scientific techniques to food preparation to further enhance the flavor of the dish served. (Full article...)

The awarding of a flitch of bacon to married couples who can swear to not having regretted their marriage for a year and a day is an old tradition, the remnants of which still survive in Great Dunmow, Essex.
The Dunmow tradition originated at the nearby Little Dunmow, where it was practiced until the mid-eighteenth century. The origin of the custom is unknown, but according to tradition it was instituted by Robert Fitzwalter in the 13th century. The Dunmow flitch was referred to in Piers Plowman and by Chaucer, and seems to have already been widely-known at that time. A similar tradition practiced at Wychnor in Staffordshire can be traced back to the fourteenth century; related customs are also known from mainland Europe in Brittany and Vienna. (Full article...)

Traditional fixed markets in Mexico are multiple-vendor markets permanently housed in a fixed location. They go by a variety of names such as "mercados públicos" (public markets), "mercados municipales" (municipal markets) or even more often simply "mercados" (markets). These markets are distinct from others in that they are almost always housed in buildings owned and operated by the local government, with numerous stands inside rented by individual merchants, who usually sell, produce and other basic food staples. This market developed in Mexico as a way to regulate pre Hispanic markets called tianguis. These tianguis markets remain in Mexico, with the most traditional held on certain days, put up and taken down the same day, much the way it was done in Mesoamerica.
These fixed mercados can be found in any town of any size in Mexico. Often, they are accompanied one or more days per week by tianguis, which set up around the main building. However, the largest, best developed and most numerous fixed markets are in Mexico City, which has over 300, 80 of which are specialty markets dedicated to one or more classes of merchandise, such as gourmet food, plants, cut flowers, candy etc. (Full article...)Selected cuisine -

The oldest known book on Portuguese cuisine (Portuguese: Cozinha portuguesa), entitled Livro de Cozinha da Infanta D. Maria de Portugal, from the 16th century, describes many popular dishes of meat, fish, poultry and others.
Culinária Portuguesa, by António-Maria De Oliveira Bello, better known as Olleboma, was published in 1936.

Everything Tastes Better with Bacon: 70 Fabulous Recipes for Every Meal of the Day is a book about cooking with bacon written by author, food commentator and The Oregonian columnist Sara Perry. The book was published in the United States on May 1, 2002, by Chronicle Books, and in a French language edition in 2004 by Les Éditions de l'Homme in Montreal. In it, Perry describes her original concept of recipes combining sugar and bacon. Her book includes recipes for bacon-flavored dishes and desserts.
The book received mainly positive reviews and its recipes were selected for inclusion in The Best American Recipes 2003–2004. The St. Petersburg Times classed it as among the "most interesting and unique cookbooks" published, the Pittsburgh Post-Gazette highlighted it in the article "Favorite Cookbooks for 2002" and The Denver Post included it in a list of best cookbooks of 2002. James Andrews Beard (May 5, 1903 – January 23, 1985) was an American chef, cookbook author, teacher and television personality. He pioneered television cooking shows, taught at The James Beard Cooking School in New York City and Seaside, Oregon, and lectured widely. He emphasized American cooking, prepared with fresh, wholesome, American ingredients, to a country just becoming aware of its own culinary heritage. Beard taught and mentored generations of professional chefs and food enthusiasts. He published more than twenty books, and his memory is honored by his foundation's annual James Beard Awards.
